A rich, fragrant celebration plate — long-grain basmati rice layered with slow-cooked lamb, saffron, fresh mint and whole aromatic spices, then finished "dum" style under a sealed lid so every grain soaks up the flavour.
Our Lamb Biryani is built the traditional dum way. We first slow-cook tender lamb with onions, yogurt, ginger-garlic and whole spices — green cardamom, cloves, cinnamon, bay leaf and a pinch of saffron — until the meat is fork-soft. Separately, basmati rice is parboiled with whole spices, then layered with the lamb curry, fried onions, saffron milk and fresh mint.
The pot is sealed and cooked on low heat so the rice finishes on the steam of the curry below — every grain stays separate and glossy, and carries the deep flavour of the lamb. Served with cooling raita and a wedge of lime. A hearty celebration plate for everyday dining and family gatherings across McKenzie Towne, Copperfield and Auburn Bay.
